Ingredients
Beef Marinade:

- 4 tbsp neutral oil (for stir-frying)
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1/2 onion (sliced)
- 3 cloves garlic (minced)
- 1 tsp ginger (minced)
Instructions
- Marinate the Beef: Combine beef cubes with Shaoxing wine, soy sauce, salt, cornstarch, and neutral oil in a bowl. Mix well and let marinate for at least 15 minutes.
- Prepare the Sauce: In a separate bowl, mix beef stock, light soy sauce, dark soy sauce, oyster sauce, ketchup, sugar, MSG (if using), black pepper, Sichuan peppercorn powder, and cornstarch. Set aside.
- Heat the Wok: Heat the neutral oil in a wok or skillet over high heat until shimmering.
- Cook the Beef: Add the marinated beef to the wok and stir-fry until browned on all sides. Remove from the wok and set aside.
- Stir-Fry Vegetables: Add garlic and ginger to the wok and sauté briefly until fragrant. Add bell peppers and onions, stir-frying until slightly softened but still crisp.
- Combine Beef and Sauce: Return the cooked beef to the wok and pour in the prepared sauce. Stir well to coat all ingredients evenly. Cook for an additional 2–3 minutes until the sauce thickens slightly.
- Serve: Transfer to a serving dish and enjoy hot with steamed rice or noodles.
