Equipment

  • Stand mixer or hand mixer
  • 8-inch (20cm) springform pan
  • Baking paper
  • Deep roasting tray
  • Digital scales

Ingredients

For the Cake:

  • 4 large eggs (separated)
  • 1 cup (240g) full-fat Greek yogurt
  • 1 cup (240g) sweetened condensed milk
  • 1 tsp vanilla bean paste or extract
  • 1 tbsp cornstarch

Optional Toppings:

  • 1 tbsp powdered sugar (for dusting)
  • 1 cup (200g) sliced strawberries or other fresh fruit

Instructions

Step 1: Preparation

  1. Preheat the oven to 320°F (160°C). Mist an 8-inch springform pan with cake release spray and line the base and sides with baking paper. Wrap the base of the pan with two layers of foil for a water bath.

Step 2: Mixing Ingredients
2. Separate the eggs, placing egg whites in one bowl and yolks in another. Ensure no yolk contaminates the whites.
3. Combine condensed milk, yogurt, vanilla paste, and cornstarch in the yolk bowl and mix until smooth.

Step 3: Whipping Egg Whites
4. Whip egg whites using a mixer until stiff peaks form but avoid overbeating to prevent them from becoming watery.

Step 4: Folding Batter
5. Gradually fold the whipped egg whites into the yolk mixture in batches using a metal spoon or spatula to retain airiness.

Step 5: Baking
6. Pour the batter into the prepared pan and place it in a deep roasting tray filled with water halfway up the pan’s sides (water bath). Bake for about 45 minutes until golden and risen. Turn off the oven and allow the cake to cool inside completely before chilling in the refrigerator for at least 2 hours or overnight.

Step 6: Serving
7. Dust with powdered sugar and garnish with fresh fruit before slicing and serving. Enjoy!

Recipe Notes

  • Use full-fat Greek yogurt for optimal texture; avoid substitutes as they may contain excess liquid.
  • Ensure egg whites are at room temperature for better whipping results.
  • The water bath ensures even cooking and prevents cracks on the cake’s surface.
  • Store leftovers in an airtight container in the refrigerator for up to four days—it tastes even better when chilled overnight!
